3 Healthy Vegan Salad Recipes that Aren’t Boring

Do you feel like you need more greens or veggies in your diet? Me too. I love traveling and trying all the amazing vegan food that different cities have to offer so I don’t hold back, but I’ll admit sometimes I don’t feel like I’m eating enough veggies. So that’s why these amazing, easy, healthy vegan salad recipes are my go-to when I am wanting to recharge on those greens! You can also watch the recipe video below.

LENTIL TOFU SALAD

So this salad is such and easy way to pack plant protein! It has tofu, with some salt turmeric and garlic for seasoning and baked because baked tofu always tastes better duh. While that’s baking I chop up my veggies. Choose as many colors as you can for those nutrients! Add your high protein high fiber items like spinach, cooked lentils and edamame along with your veggies and tofu for an extra packed protein salad. For dressings I get lazy sometimes so this one from Trader Joes is PERFECT for so many salads. Just pour it and enjoy! 

INGREDIENTS:

Extra Firm Tofu

1/2 tsp Salt

1/2 tsp Turmeric

1/2 tsp Garlic Powder

1/2 Cup Cooked Green Lentils (Prepare 1 cup of lentils with a bay leaf, salt and olive oil) 

1/2 Cup Edamame

1/2 Cup Chopped Cucumber

1/2 Cup Bell Pepper

Giant handful of Spinach

Parsley for garnish (optional)

DIRECTIONS

Preheat oven to 425F

Pat tofu dry and season with salt spices bake for 20min

While tofu is baking, chop all veggies and spinach

Once tofu is done, add spinach to a bowl along with the lentils, veggies, edamame, tofu and dressing of choice

 

SPICED CAULIFLOWER & CHICKPEA SALAD

Now this is one of my all time favorites. It’s got sweet potatoes, cauliflower and chickpeas and spiced to perfection. It’s got coriander, cumin, cinnamon, and smoked paprika. When you add this to the veggies it takes it to the next level! 

I also like to make quinoa for this salad for extra protein and fiber. For the dressing I add tahini, garlic, lemon juice and dill with a bit of water. And Careful because you will have garlic breath after this but #worthit 

INGREDIENTS

1 Cauliflower cut into Florets

1 large sweet potato

1 cup cooked chickpeas or 1 can

1 GIANT handful of Spinach
Quinoa - 1/4 cup - 1/2 cup and cook as directed (15 min)

Spice Mix

1/2 tsp cumin

1/2 tsp coriander

1/2 tsp cinnamon

1/2 tsp smoked paprika

Pinch of oregano

Pinch of thyme

Salt & pepper to taste


TAHINI DRESSING

1/4 cup tahini

2 garlic cloves minced

1/2 Lemon juiced

1/2 tsp dried dill

Salt

DIRECTIONS

On an oiled baking pan, add cauliflower, sweet potatoes and chickpeas and top with the spice mix.

Bake at 425 F for 20 min

While veggie are baking mix all Tahini Dressing Ingredients

Once veggies are baked add spinach and cooked quinoa to a bowl, top with the baked veggies and tahini dressing and enjoy!


BEET SALAD

Now it’s time to drop the beets! This is a nice sweet and savory option you definitely gotta try. Of course start with spinach again, add cooked beets this is good for your blood. Add some of the new Trader Joes VEGAN FETA! If you haven’t tried it I highly recommend. Add walnuts for protein ..and this dijon dressing I’ll include the recipe below but you can add whatever dressing you like


INGREDIENTS

2 Small Chopped Beets cooked (you can also buy these at Trader Joes)

1/2 Cup Cooked Lentils

1/4 Cup Walnuts

1 GIANT handful of Spinach

Vegan Feta ( I like Trader Joes Brand)

DIJON DRESSING

1/2 tsp Dijon Mustard

1 tsp Agave or Maple Syrup

1 tsp Apple Cider Vinegar

1 Tbs Olive Oil or to Taste

Salt to taste

DIRECTIONS

Assemble all veggies on top of spinach, add dressing Toss and Enjoy!
