My Salvadoran Breakfast Recipe “Desayuno Típico”

I could eat this breakfast every morning..like seriously! Eggs were one of the hardest things for me to give up when I went vegan because of how staple this breakfast is to me. But thankfully there are plenty of vegan options that helped me wean me off eggs. So lemme show you!

Ingredients

Salvi Breakfast Ingredients
  • Salvadoran refried beans (recipe video here) heated up
  • 1 or 2 Ripe plantains - when I say ripe, I mean like almost black!
  • 1 Block of Firm or Extra Firm Tofu (patted dry) OR you can also use JustEgg
  • 1/2 White Onion Minced
  • 1 Large Roma Tomato
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp turmeric
  • Salt to taste - I like using Black salt (Kala namak) *Kala namak has sulphuric properties that makes tofu taste “eggy”

Instructions

Directions:
  1. Mince the onion and tomato
  2. To an oiled pan on medium heat add the onion and cooke until translucent (if you don’t wanna use a lot of oil you can also add some water to stream and soften them) Then add tomatoes and cook until tomatoes are cooked down as well.
  3. Break Tofu with your hands and mix with onion and tomato.
  4. Add garlic powder, onion powder, turmeric and salt and mix until incorporated.
  5. For the plantains, remove skin, slice into about 6 pieces. Fry in oil until golden brown.
  6. Serve with beans, avocado, vegan crema, plantains and tortillas.

*Please ensure plantains are very ripe.
