Vegan Peppermint Hot Chocolate

This is my favorite vegan hot chocolate recipe! Christmas is all about the peppermint for me. I'm literally addicted... it’s dairy-free, low fat, refined sugar-free, and perfect for one single serving. If you want more you can just double it. Let me know what you think.

BUY THE INGREDIENTS:

12 oz plant milk (I like oat or almond milk)

1 Tbs Pure Cocao Powder

1/2 Tbs Corn starch

1 TBS Coconut sugar

2 Drops Peppermint Flavor

1 oz chopped dark chocolate Vegan Whipped Cream

DIRECTIONS

1. Mix pure dark cocoa powder and cornstarch with a bit of cold milk to form a paste, this will prevent lumps.

2. Heat up your vegan milk of choice and when warm to hot add the chocolate paste and stir until dissolved.

3. Add coconut sugar, a couple drops of peppermint oil or extract, a bit of chopped dark chocolate, and then stir until all lumps are gone. If you still have some don’t worry just strain it.

4. Top with vegan whip cream and decorate as you wish and enjoy!
