I first transitioned to a plant-based diet because I was convicted of it’s health benefits. I initially worried that I would have to give up some of my favorite Salvadoran dishes that were part of my identity. However, I quickly realized that going vegan wasn’t about giving anything up, it simply was about reimagining the foods I love in a way that aligns with my values, without sacrificing flavor.
This ebook is incredibly special to me because it features 11 recipes I grew up with. From pupusas to panes sin pavo and chilaquilas, these are dishes passed down from my family, now adapted for a plant-based lifestyle. While there are many more recipes I will share one day, this collection features my favorites, and the ones I make on repeat with my family or for my friends.
I want to inspire and encourage others to try a plant-based lifestyle and show how with just one small change at a time you can move closer to a healthier you and help the environment.
